- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let it cool completely before frosting.
- For the frosting, beat together cream cheese, powdered sugar, and milk until smooth.
- Spread the frosting over the cooled pumpkin bars.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- These bars also freeze well; wrap individually in plastic wrap.
