A quick and delicious chicken stir-fry that’s perfect for weeknight dinners!


Ingredients

  • 1 pound boneless, skinless chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon sesame oil


Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add garlic and ginger, and sauté for about 30 seconds.
  3. Add chicken slices and cook until browned and cooked through.
  4. Add mixed vegetables and stir-fry for about 5 minutes.
  5. Pour in soy sauce and sesame oil, toss to coat.
  6. Serve hot over rice or noodles.

Notes

  • For extra flavor, marinate the chicken in soy sauce for 30 minutes before cooking.
