A quick and delicious chicken stir-fry that’s perfect for weeknight dinners!
Ingredients

- 1 pound boneless, skinless chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 teaspoon sesame oil
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add garlic and ginger, and sauté for about 30 seconds.
- Add chicken slices and cook until browned and cooked through.
- Add mixed vegetables and stir-fry for about 5 minutes.
- Pour in soy sauce and sesame oil, toss to coat.
- Serve hot over rice or noodles.
Notes
- For extra flavor, marinate the chicken in soy sauce for 30 minutes before cooking.
- You can substitute any vegetables you like.
