- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup chopped cherries
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together almond flour, all-purpose flour, sugar, salt, and baking powder.
- In another bowl, beat the butter, egg, vanilla extract, and almond extract until smooth.
- Combine the wet and dry ingredients, then fold in the chopped cherries.
- Drop tablespoon-sized dollops of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container for up to a week.
- You can substitute dried cherries for fresh cherries if desired.
- For a richer flavor, add a few spoonfuls of chocolate chips.
