These double chocolate zucchini muffins are moist, chocolatey, and a sneaky way to get in some veggies!
Ingredients

- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix the grated zucchini, sugars, and oil together.
- Add the eggs and vanilla, mixing well.
- In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chocolate chips.
- Divide the batter among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For a healthier option, replace half of the sugar with applesauce.
