Description

These double chocolate zucchini muffins are moist, chocolatey, and a sneaky way to get in some veggies!


Ingredients

Scale
  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the grated zucchini, sugars, and oil together.
  3. Add the eggs and vanilla, mixing well.
  4. In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Divide the batter among the muffin cups, filling each about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • For a healthier option, replace half of the sugar with applesauce.
