- 4 egg whites

- 4 egg yolks
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 300°F (150°C).
- Whip egg whites and salt until soft peaks form, then gradually add sugar, continuing to beat until stiff peaks form. Fold in the vanilla, flour, and pecans.
- Spoon the mixture onto a parchment-lined baking sheet and shape into a round cake.
- Bake for about 1 hour until golden and firm to the touch, then let cool completely.
- In a separate bowl, cream together the butter and sugar until fluffy. Add egg yolks one at a time, mixing well after each addition.
- In another bowl, whip the cream with vanilla until stiff peaks form. Gently fold the whipped cream into the butter mixture.
- Once the meringue base is cool, spread the cream mixture over the top.
- Slice and serve the cake chilled, garnished with additional pecans if desired.
Notes
- This cake can be made a day in advance and stored in the refrigerator for best results.
- Make sure that no egg yolk gets into the egg whites to achieve peak volume.
