- 1 pound ground turkey
- 1 cup rice
- 1 can black beans, drained
- 1 cup corn
- 1 packet taco seasoning
- 2 cups chicken broth
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1 cup shredded cheese
- 1 tablespoon olive oil
- 1/4 cup chopped cilantro
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced onions and ground turkey, cooking until the turkey is browned.
- Stir in taco seasoning, rice, diced tomatoes, black beans, corn, and chicken broth.
- Bring to a boil, then reduce heat and cover to simmer for about 20 minutes, or until rice is cooked.
- Remove from heat and sprinkle shredded cheese on top.
- Garnish with chopped cilantro before serving.
