- 4 large bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup diced tomatoes
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a saucepan, combine quinoa and vegetable broth; bring to a boil, then reduce to a simmer and cover for 15 minutes.
- In a large bowl, mix cooked quinoa, black beans, corn, tomatoes, cumin, and chili powder.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
- If desired, sprinkle cheese on top.
- Bake for 25-30 minutes until peppers are tender.
