Description
A rich and creamy broccoli cheese soup made easy in a crockpot.
Ingredients

- 4 cups broccoli florets
- 1 cup diced onions
- 2 cups vegetable broth
- 1 cup shredded carrots
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Combine broccoli, onions, vegetable broth, carrots, garlic powder, salt, and pepper in the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
- Use an immersion blender to puree the soup to desired consistency.
- Stir in cheese and heavy cream until melted and heated through.
- Finish with butter and mix well before serving.
Notes
- This soup can be easily frozen. Just reheat on low heat before serving.
- Add more cheese for a cheesier flavor.
