Description

A rich and creamy broccoli cheese soup made easy in a crockpot.


Ingredients

Scale
  • 4 cups broccoli florets
  • 1 cup diced onions
  • 2 cups vegetable broth
  • 1 cup shredded carrots
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Combine broccoli, onions, vegetable broth, carrots, garlic powder, salt, and pepper in the crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  3. Use an immersion blender to puree the soup to desired consistency.
  4. Stir in cheese and heavy cream until melted and heated through.
  5. Finish with butter and mix well before serving.

Notes

  • This soup can be easily frozen. Just reheat on low heat before serving.
  • Add more cheese for a cheesier flavor.
