Ingredients

- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups spinach, chopped
Instructions
- Rinse lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté until vegetables are softened.
- Add garlic, thyme, paprika, salt, and pepper. Cook for another minute.
- Stir in the lentils, broth, and tomatoes. Bring to a boil.
- Reduce heat and let simmer for 30-35 minutes, until lentils are tender.
- Stir in spinach and cook for an additional 5 minutes.
- Serve warm and enjoy!

- This soup can be frozen for later use.
- Adjust seasoning to taste before serving.
