Ingredients

  • 1 pound flank steak
  • 1/4 cup lime juice
  • 1/4 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes


Instructions

  1. In a bowl, mix lime juice, cilantro, garlic, olive oil, cumin, chili powder, salt, and pepper.
  2. Marinate the flank steak in this mixture for at least 30 minutes.
  3. Heat a grill or skillet over medium-high heat and cook the steak for 5-7 minutes on each side for medium-rare.
