Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 6 cups vegetable or chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 package cheese tortellini (9 oz)
- 2 cups fresh spinach
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in minced garlic, oregano, and basil; cook for 1 minute.
- Add chicken broth and diced tomatoes; bring to a boil.
- Stir in tortellini and cook according to package instructions.
- Add spinach and heavy cream; stir until spinach is wilted.
- Season with salt and pepper to taste; serve hot.
Notes
- This soup can be made ahead and stored in the refrigerator for up to three days.
- For a lighter version, substitute heavy cream with milk.
