- 2 large sweet potatoes
- 1 pound cooked shredded chicken
- 1/2 cup buffalo wing sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup blue cheese crumbles (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut sweet potatoes into wedges or fries.
- In a bowl, toss sweet potato fries with olive oil, garlic powder, paprika, salt, and pepper.
- Spread fries on a baking sheet in a single layer.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- In a separate bowl, mix shredded chicken with buffalo wing sauce until well-coated.
- Once fries are done, top with buffalo chicken and blue cheese if using.
- Return to the oven for an additional 5-10 minutes.
- Remove from the oven and garnish with chopped parsley before serving.
Notes
- For a milder flavor, use a mild wing sauce or reduce the amount used.
- Leftover chicken works great for this recipe.
- These can be served with additional ranch or blue cheese dressing on the side for dipping.
