- 2 cups broccoli florets
- 1 cup uncooked rice
- 2 cups vegetable broth
- 1 cup shredded cheddar cheese
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup milk
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 350°F (175°C).
- In a saucepan, combine rice and vegetable broth; bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- In a skillet, sauté onion and garlic until soft. Add broccoli, cook for 5 minutes.
- In a large bowl, combine cooked rice, broccoli mixture, cheese, milk, salt, pepper, and nutmeg. Mix well.
- Transfer mixture to a greased baking dish and top with remaining cheese.
- Bake for 30 minutes or until bubbling and golden.
Notes
- For extra flavor, add cooked chicken or sausage.
