Description

A delicious and easy breakfast option featuring sweet blueberries and cream cheese, all wrapped in a crispy quesadilla.


Ingredients

  • 1 cup fresh blueberries
  • 4 oz cream cheese, softened
  • 2 whole wheat tortillas
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 2 tablespoons butter


Instructions

  1. In a bowl, mix the cream cheese, honey, and cinnamon until smooth.
  2. Spread the mixture evenly onto one side of each tortilla.
  3. Sprinkle the blueberries over one of the tortillas.
  4. Top with the second tortilla, cream cheese side down.
  5. Heat butter in a skillet over medium heat.
  6. Cook the quesadilla for about 3-4 minutes on each side, until golden brown and crispy.
  7. Remove from the skillet, cut into wedges, and serve warm.

Notes

  • For an extra crunch, add some chopped nuts.
  • You can use frozen blueberries if fresh ones are not available.
