A hearty and flavorful black bean soup that is easy to make and perfect for any occasion.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans (15 ounces) black beans, rinsed and drained
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for another 1-2 minutes.
- Add black beans, vegetable broth, cumin, chili powder, salt, and black pepper. Bring to a boil.
- Reduce heat and let it simmer for about 20 minutes.
- Use an immersion blender to blend the soup to your desired consistency.
- Stir in lime juice and cilantro before serving.
Notes
- For added flavor, top with avocado or sour cream.
- This soup can be made ahead of time and tastes even better the next day.
