A hearty and comforting soup made with beef, cabbage, and a selection of root vegetables.
Ingredients

- 1 pound beef chuck, cut into bite-sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups green cabbage, shredded
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh dill, chopped
Instructions
- In a large pot over medium heat, brown the beef pieces.
- Add the onions and garlic, and sauté until the onions are translucent.
- Pour in the beef broth and bring to a boil.
- Add the cabbage, carrots, and potatoes.
- Season with salt and pepper.
- Reduce heat to low, cover, and simmer for about 45 minutes, or until the vegetables are tender.
- Stir in the fresh dill before serving.
Notes
- This soup can be made a day in advance for better flavor.
- Feel free to add other vegetables like bell peppers or tomatoes.
