Ingredients

- 4 cups bread flour
- 1 tablespoon sugar
- 2 teaspoons salt
- 2 teaspoons active dry yeast
- 1 ½ cups warm water
- 1 tablespoon malt syrup (or honey)
- 1 tablespoon baking soda
- 1 egg (for egg wash)
- sesame seeds (for topping)
- poppy seeds (for topping)
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let it sit until frothy, about 10 minutes.
- Add flour and salt. Mix until a dough forms.
- Knead the dough for about 10 minutes until smooth. Let rise in a greased bowl for 1 hour.
- Punch down the dough and divide it into 8 equal pieces.
- Shape each piece into a bagel and let them rest on a floured surface for 10 minutes.
- Preheat oven to 425°F (220°C) and bring a large pot of water to a boil. Add malt syrup and baking soda.
- Boil each bagel for 1 minute on each side, then place on a baking sheet.
- Brush with egg wash and sprinkle with sesame or poppy seeds.
- Bake for 20-25 minutes until golden brown.
Notes
- For the best flavor, let the bagels cool before slicing.
- Store bagels in a sealed bag at room temperature for 2 days.
