Instructions
- Bring a large pot of salted water to a boil.
- Add spaghetti and cook according to package directions until al dente.
- In a separate pan, cook pancetta or guanciale over medium heat until crisp.
- In a bowl, whisk together eggs and Parmesan cheese.
- Drain the spaghetti, reserving some pasta water.
- Add hot spaghetti to the pan with pancetta, and remove from heat.
- Quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with salt and black pepper to taste, and serve immediately.
