- 1 tablespoon red food coloring
- 1/2 cup fresh cherries, chopped
- 1/4 cup cream cheese, softened (for topping)
Instructions
- In a bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the egg, buttermilk, vegetable oil, vanilla extract, and food coloring.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chopped cherries.
- Heat a skillet over medium heat and lightly grease it.
- Pour 1/4 cup of the batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve warm with a dollop of cream cheese on top.
Notes
- These pancakes can be made ahead and frozen for quick breakfasts.
- For a thicker pancake, reduce the amount of buttermilk slightly.
